Heat a pan, add 1 Tbsp. oil, once hot add cubed sweet potato, cook until browned on all sides and softened.
In a large bowl combine bean medley, pepper, garlic, onion, and parsley. Then add cooked cubed sweet potato, lemon juice, cilantro, mango turmeric, red pepper flakes and top with 2 Tbsp oil, salt and pepper. Mix until fully combined and ready to serve.
