In a pot, boil cubed sweet potatoes, until soft and tender, remove from heat and drain. Set aside.
In a blender, add eggs, melted butter, sugar, boiled cubed sweet potatoes, flour, milk, vanilla extract, and cinnamon. Blend until combined, scraping down the sides, until batter is smooth. Chill Batter for 30 minutes.
In a skillet over medium heat, add butter, once melted, add ¼ cup of batter, spreading batter in pan, until thinly layered. Cook until the batter bubbles and carefully flip to cook the other side, until golden on both sides, repeat until batter is finished.
Place on a plate and spread Nutella, add sliced strawberries, fold and add icing sugar, whipped cream, fruit topping and ready to serve.
