Pre-heat oven to 375 degrees. Grease a 9×5 loaf pan.
In a large bowl, whisk together flour, baking powder and salt. Add brown sugar, white sugar, add shredded carrots, jalapeno, and black olives, mix well. Add beer and mix until fully combined and forms into a dough.
Place dough in loaf pan and spread evenly. Add butter on top evenly and bake for 60 minutes until golden brown and toothpick inserted in centre comes out clean. Once cooked remove from heat and ready to serve.
