Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley
  • 1 Lb. Lean Ground Chicken or Turkey
  • 3 Green Onions, finely sliced
  • 1 Cup Mixed Shredded Cheddar Mozzarella Cheese
  • 1 Cup Cottage Cheese, 2%
  • 1.5 Cups Flour, all purpose
  • 2 Tsp. Baking powder
  • 4 Eggs, beaten
  • ¼ Cup Milk
  • 2 Tbsp. Olive Oil
  • 1 Tsp. Italian Seasoning
  • 1 Tbsp Maple Syrup
  • 1 Tbsp Butter
  • ¼ Tsp. Salt

What You Need

Directions

  1. Pre- heat oven at 400 degrees. Using a 12-pan muffin tray, lightly coat with cooking spray or liners.
  2. In a Skillet, on medium to high heat, once hot, add butter, once melted add turkey meat, chop meat in small pieces, cook until meat is browned, add Italian seasoning, salt, riced veggie medley and sauté until veggies are tender. Remove from heat and set aside.
  3. In a large bowl, add cottage cheese, eggs, milk, maple syrup, olive oil, whisk until combined. Slowly add flour and baking powder, using a spatula mix until fully combined. Add Veggie Medley Turkey mixture, green onions and shredded cheese and mix well.
  4. Place Veggie medley mixture in Muffin Tray. Bake for 20 minutes, until cooked, using a toothpick insert in centre and comes out clean. Slightly cool, remove muffins from pan and ready to serve.
