Ingredients

  • 1 Package Harvest Fresh Riced Veggie Medley
  • 4pcs. Cod, steamed or fish of preference
  • 1 Cup light coconut milk
  • 2 Tsp. Garlic Powder
  • ¼ Cup Cilantro, finely chopped
  • 1/8 Tsp. Black Pepper
  • 1 Tsp. Salt
  • 1 Tbsp. Butter

Coconut Cilantro Lime dressing

  • ¼ Cup light coconut milk
  • 2 Garlic cloves, finely chopped
  • ½ Tbsp. Ginger, grated
  • 1 Tbsp. Lime Juice
  • 1 Tbsp. Cilantro, chopped
  • Salt to taste

What You Need

Directions

  1. In a large skillet on medium to high heat, add butter and melt. Add riced veggie medley, coconut milk, garlic powder, salt, pepper and cilantro, mix well, cook for 5 minutes.
  2. In a bowl, add dressing ingredients, whisk until combined.
  3. In a dish add Coconut veggie medley mix, add steamed fish on top, add dressing, and ready to serve.
