Ingredients

  • 1 Package Harvest Fresh Riced Cauliflower
  • ½ Package Cremini Mushrooms, sliced
  • 1 Red Pepper, Sliced
  • ½ Red Onion, diced
  • 2 Garlic Cloves, minced
  • 1 Tbsp. Oil
  • 1 Cup Vegetable Broth
  • ½ Cup Parmesan, grated
  • 4 Tbsp, Cooking Cream
  • ½ Tsp Thyme
  • 1 Tsp Salt
  • ¼ Tsp Pepper

What You Need

Directions

  1. In a skillet, add oil, once hot, add onion sauté until translucent add, garlic sauté until fragrant, add peppers and mushrooms, sauté until tender. Add riced cauliflower, sauté for 3 minutes, until cooked.
  2. Pour in vegetable broth, let simmer until absorbed. Add cooking cream, parmesan and seasonings.
  3. Cook until creamy and thickened, remove from heat, sprinkle with parmesan and ready to serve.
