Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 2 Harvest Fresh Nantes Carrots, diced
- 1 Raw Harvest Cubanelle Pepper, cored and diced
- 2 Celery Sticks, diced
- 1 Red Pepper, cored and diced
- 1 Onion, diced
- 1 LB. Ground Veal
- 2 Tbsp. Olive Oil
- 8 Cups Chicken Broth
- 3 Garlic Cloves, finely chopped
- 2 Cans Diced Fire Roasted Tomatoes
- 1 Tbsp. Italian Seasoning
- Salt and Pepper to Taste
- Fresh Cilantro and Parmesan Cheese, Garnish
Directions
- In a pot, on medium heat, add oil, once heated add ground meat, cook until meat is browned.
- Add onion, garlic, carrots, celery, stirring often for 5 minutes. Add cubed sweet potato, bell pepper, cubanelle pepper, Italian seasoning, diced tomatoes and broth. Mix until fully combined.
- Bring to a boil, then reduce to low heat, cover and cook for 20 minutes, until vegetables have softened. Add salt and pepper to taste.
- Remove from heat, and place in bowls, top with fresh cilantro, parmesan cheese and ready to serve.
