Ingredients

Coconut Cilantro Lime dressing

  • ¼ Cup light coconut milk
  • 2 Garlic cloves, finely chopped
  • 1 Tbsp. Ginger, grated
  • 2 Tbsp. Lime Juice
  • 1 Tbsp. Cilantro, chopped
  • Salt to taste

Directions

  1. In a large skillet on medium to high heat, add butter and melt. Add riced veggie medley, coconut milk, garlic powder, salt, pepper and cilantro, mix well, cook for 5 minutes.
  2. In a bowl, add dressing ingredients, whisk until combined.
  3. In a large bowl add Coconut veggie medley mix, add dressing on top and ready to serve.
