Ingredients
- 1 Package Harvest Fresh Riced Veggie Medley
- 1 Cup light coconut milk
- 2 Tsp. Garlic Powder
- ¼ Cup Cilantro, finely chopped
- 1/8 Tsp. Black Pepper
- 1 Tsp. Salt
- 1 Tbsp. Butter
Coconut Cilantro Lime dressing
- ¼ Cup light coconut milk
- 2 Garlic cloves, finely chopped
- 1 Tbsp. Ginger, grated
- 2 Tbsp. Lime Juice
- 1 Tbsp. Cilantro, chopped
- Salt to taste
Directions
- In a large skillet on medium to high heat, add butter and melt. Add riced veggie medley, coconut milk, garlic powder, salt, pepper and cilantro, mix well, cook for 5 minutes.
- In a bowl, add dressing ingredients, whisk until combined.
- In a large bowl add Coconut veggie medley mix, add dressing on top and ready to serve.
