Ingredients
- 1 Package Harvest Fresh Nantes Carrots
- 1 Tbsp honey, plus more for drizzle
- 1 Tbsp. Olive Oil
- 2 Garlic Cloves, finely chopped
- ½ Tsp. fresh dill, chopped
- ¼ Tsp Salt
- ¼ Cup feta cheese, crumbled
- Pepper to taste
- Fresh Dill for garnish
Directions
- Pre-heat oven at 425 degrees, line a baking sheet with parchment paper.
- Cut Nantes Carrots, lengthwise into preferred size.
- In a large bowl, add Nantes carrots, oil, honey, garlic, dill, salt and pepper. Toss until fully combined. Reserve leftover liquid from bowl. Set aside
- Place Nantes Carrots on baking sheet, and bake for 25 minutes, until carrots are tender. Remove from oven and top with reserved liquid, place back in oven for 5 minutes.
- Remove from heat, plate and top with feta cheese, dill, and drizzle honey and ready to serve.
