Ingredients
- 1 Package Harvest Fresh Zucchini Spirals
- ½ Package Fettuccine pasta, cooked, optional
- 1 Onion, thinly sliced
- 3 Garlic Cloves, finely chopped
- 1 Can diced Fire Roasted Tomatoes
- 4 Fire Roasted Peppers, thinly sliced
- ¼ Cup Parmesan cheese
- 2 Tbsp. Olive oil
- Red Pepper Flakes
- Fresh Rosemary sprig, taken off sprig
- 1 Tsp. Oregano
- Salt and pepper to taste
Directions
- In a skillet, once hot, add oil, on medium heat sauté onions, until translucent, sauté garlic until fragrant, add red pepper flakes, Rosemary, diced tomatoes, parmesan cheese, mix until combined.
- Add zucchini spirals, sauté for 5 minutes, until soft and tender, add cooked pasta, season with salt and pepper. Mix until all combined. Remove from heat.
- Top with roasted peppers, Burrata cheese, slice open and drizzle with oil, oregano, and ready to serve.
