Ingredients
- 1/2 Package Harvest Fresh Zucchini Spirals
- 1 Cup Flour, all-purpose
- 1 Cup Granulated sugar
- ½ Cup Cocoa powder, unsweetened
- ¾ Tsp. Baking powder
- ¾ Tsp. Baking soda
- 1 Tsp. Salt
- 1 Egg, Large
- ½ Cup Vegetable oil
- ½ Cup Milk
- 3 Tsp. Vanilla Extract
- ½ Cup Coffee, or warm water
Topping
- Chocolate Syrup
- Vanilla Ice Cream
- Strawberries, Sliced
Directions
- Pre-heat oven at 350 F. Lightly spray an 8 x 8-inch baking pan with non-stick spray.
- In a large bowl, add flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well with a stand mixer
- In a large bowl, add egg, milk, oil, and vanilla extract. Mix well using stand mixer on low. When all combined increase speed for 3 minutes. Then add coffee a little at a time, until batter becomes thin.
- Add Zucchini Spirals and mix with a spatula.
- Pour batter into baking pan. Bake for 35 minutes, until a toothpick is inserted in the centre of the cake and comes out clean.
- Remove from oven, allow to cool for 10 -15 minutes, and remove from pan.
- When ready to serve, add chocolate syrup, vanilla ice cream and strawberries for topping.
