Ingredients
- 1 Package Harvest Fresh Riced Cauliflower, steamed
- ½ Package Harvest Fresh Broccoli, steamed
- 2 Lb. Skinless Boneless Chicken Breasts
- ½ Package Pasta Fusilli, or pasta of preference
- 2 Large Eggs, whisked
- 3 Cups, Mozzarella Cheese, shredded
- 1 Cup Italian blend Cheese, shredded
- 2 Tsp. Sea Salt
- 2 Tsp. Garlic Powder
- 2 Tsp. Onion Powder
- 1 Tbsp. Olive Oil
- 2 Tbsp. Butter, melted
Directions
- Pre-heat oven at 400 degrees. Spray a large baking dish with non-stick cooking spray. Set aside
- Cook pasta, as per package directions.
- Slice Chicken breasts horizontally in halves. Lightly coat with olive oil, add salt pepper and place on a baking sheet. Then bake for 20 minutes, until cooked. Then set aside for 10 minutes, until cool. Chop chicken into small pieces.
- In a large bowl, add cooked pasta, cauliflower rice, broccoli, chicken, eggs, mozzarella cheese, salt, onion powder, garlic powder and butter. Mix well, until combined.
- Place in a large baking dish and top with Italian blend shredded cheese.
- Bake for 35 minutes, until golden brown and cheese has melted. Let cool and ready to serve.
