Ingredients

  • 1 Cup Raw Harvest Jalapeno, cored and minced
  • 1 Pork Tenderloin
  • 1 Package Herb and Garlic Boursin Cheese
  • ½ Cup Cheddar Cheese, shredded
  • 1 Package Sliced Bacon
  • 1 Tsp. Chili Powder

Directions

  1. Pre-heat oven at 400 degrees
  2. Lay tenderloin flat on a cutting board, slice in half lengthwise, not cutting all the way through.
  3. In bowl, add Jalapeno, Boursin herb and garlic cheese, cheddar cheese and chili powder.
  4. Spread Jalapeno cream cheese mixture evenly on the pork loin.
  5. Wrap bacon around tenderloin, until covered on all sides.
  6. In a large bowl add vegetables, olive oil, salt, and pepper and mix well.
  7. In a large baking pan, add stuffed tenderloin and vegetables. Place in oven for 45-60 min, until cooked. Remove from oven, let cool for 10 min prior to serving.
  8. On a large dish add pork tenderloin, top with gravy, and serve with roasted vegetables.
