Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- ½ Package Cremini Mushrooms, sliced
- 1 Red Pepper, Sliced
- ½ Red Onion, diced
- 2 Garlic Cloves, minced
- 1 Tbsp. Oil
- 1 Cup Vegetable Broth
- ½ Cup Parmesan, grated
- 4 Tbsp, Cooking Cream
- ½ Tsp Thyme
- 1 Tsp Salt
- ¼ Tsp Pepper
Directions
- In a skillet, add oil, once hot, add onion sauté until translucent add, garlic sauté until fragrant, add peppers and mushrooms, sauté until tender. Add riced cauliflower, sauté for 3 minutes, until cooked.
- Pour in vegetable broth, let simmer until absorbed. Add cooking cream, parmesan and seasonings.
- Cook until creamy and thickened, remove from heat, sprinkle with parmesan and ready to serve.
