Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato, boiled
- 6 Extra large Eggs
- 3 Tbsp. Mayonnaise
- 2 Tsp Dijon Mustard
- ¼ Tsp Salt
- 4 drops Truffle oil
- Paprika, topping
- Chives, topping
Directions
- In large pot, boil sweet potatoes in water, until soft and tender. Remove from heat and drain in a strainer.
- In a pot, boil eggs in boiling cold water for 7 minutes. Remove from heat and place in a bowl with water and ice cubes. Once cool (10min approx.) remove and peel off shell. Cut Eggs in half and remove egg yolk. Set Egg Whites aside and place egg yolks in bowl.
- In a bowl add egg yolks and mash, add mayonnaise, Dijon mustard, truffle oil, salt and mashed sweet potatoes, then pass through a blender for smooth consistency.
- Fill Egg whites with Sweet Potato filling, using a piping bag,
- Top with paprika and chives and ready to serve.
