Ingredients

  • 1 Bag Harvest Fresh Spinach
  • 1.5Lb 3pk Variety Ground Meat
  • 1 ¼ Cup Mushrooms, sliced
  • ½ Onion, diced
  • ½ Red Pepper, diced
  • ¼ Cup Parmesan Cheese
  • 1 Tbsp. Olive Oil
  • 3 Garlic Cloves, minced
  • 2 Cups Shredded Mozzarella Cheese
  • 1 Egg
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Italian Seasoning
  • 1 Tsp. Salt
  • ¼ Tsp. Pepper

Directions

  1. Preheat oven at 375 degrees.
  2. In a bowl, add ground meat, egg, parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Mix until fully combined. Set aside.
  3. In a skillet, over medium- high heat, add oil, onion sauté until translucent, add garlic sauté until fragrant, add mushrooms sauté until browned add peppers, sauté until slightly softened, add Spinach, sauté until wilted. Remove from heat.
  4. On a baking pan, lined with foil, place ground meat mixture, spread to fill the pan. Top with Shredded Mozzarella Cheese and spinach mixture and spread evenly.
  5. Roll the meat with foil from right to left forming a loaf and sealing the edges until fully sealed. Cover stuffed meat roll with foil and place in oven for 10 minutes, remove foil and bake for additional 35 minutes, until cooked and golden brown. Remove from oven, slice in rounds and ready to serve.
