Ingredients
- 1 Package (400 g) Harvest Fresh Zucchini Spirals, chopped
- 1 ½ Cups, Rotisserie Chicken, shredded finely
- 1 Cup Shredded Cheese, mixed
- ½ Cup Parmesan Cheese, grated
- 2 Eggs, large
- ¼ Cup Almond flour
- 1 Tsp. Baking Powder
- 1 Tsp. Garlic Powder
- 1 Tsp. Italian Seasoning
- Salt and Pepper, to taste
Directions
- Pre-heat oven at 375 degrees, lightly spray 12-cup muffin tin with cooking spray.
- In a large bowl, add zucchini, chicken, shredded cheese, parmesan cheese, eggs, almond flour, baking powder, garlic powder, Italian seasoning, salt and pepper. Mix until fully combined.
- Scoop Zucchini mixture evenly into muffin cups, filling ¾ to the top.
- Place in oven, and bake for 20 – 25 minutes, until muffins are golden brown. Remove from heat, let cool and ready to serve.
