Ingredients
- 1 Bag Harvest Fresh Spinach
- 4 Harvest Fresh Cipolline Onions, finely chopped
- 6 Ex-Large Eggs, whisked vigorously
- 1 ½ Cup Cottage Cheese
- 1 Cup Mixed Shredded Cheese, divided
- 1 Garlic Clove, minced
- 1 Tsp. Italian Seasoning
- 1 Tbsp. Oil
- 1 Tsp. Salt
- ½ Tsp. Black Pepper
Directions
- Pre-heat oven at 375 degrees and lightly spray a round baking dish with cooking spray.
- In a skillet, on medium heat, add oil, once heated add onions, sauté until translucent, add garlic, sauté until fragrant, add spinach sauté until wilted.
- In a bowl, add sauteed spinach, cottage cheese, half of shredded cheese, eggs, Italian seasoning, salt, pepper, mix until fully combined.
- Pour spinach egg mixture into baking dish, top with remaining shredded cheese.
- Bake for 30 minutes until set and golden brown. Remove from heat, let cool and ready to serve.
