Ingredients

  • 2 Cups Harvest Fresh Spinach
  • 1 Cup Cottage Cheese
  • 1 Cup Mozzarella Cheese, Shredded
  • 1 Egg
  • 1 Cup Flour, all-purpose
  • 1 Tsp. Baking powder
  • 1 Garlic Clove, minced
  • 1 Tbsp. Olive Oil for frying, + 2 tbsp
  • 1 Tsp. Salt

Directions

  1. Pre-heat oven at 375 degrees and line a baking sheet with parchment paper.
  2. In a skillet, add Olive Oil, sauté garlic, until fragrant, add spinach, sauté until wilted. Set aside and let cool slightly and finely chop.
  3. In a large bowl, add cottage cheese, olive oil, egg, mix until completely combined.
  4. In a bowl, add flour, baking powder and salt, gradually add cottage cheese mixture, mix until combined
  5. Fold in Sauteed Spinach and shredded mozzarella cheese.
  6. Scoop portions using a scooper and place on parchment paper.
  7. Bake for 15-20 minutes, cook until cooked and golden brown, remove from heat and slightly cool before serving.

