In a Large pot, add Cubed Sweet Potato and cubed veggie medley. Boil until, veggies have softened. Remove from heat and drain.
In a large bowl, mash veggies using a fork or potato masher. Once mashed add green onion, parsley, egg, flour, salt and pepper. Mix until fully combined.
In a skillet, on medium to high heat, add oil, spoon veggie batter in skillet, flatten to form a patty using a spatula. Fry until golden brown, approx. 4 minutes per side. Repeat until batter is finished, remove from heat and ready to serve.
