Ingredients

  • 1 Bag Harvest Fresh Spinach, sautéed, chopped
  • 2-3 Harvest Fresh Shallots, diced
  • 2 Tbsp. Butter
  • 3 Garlic Cloves, finely chopped
  • 6 Mushrooms, chopped
  • ¼ Tsp. Red Pepper Flakes
  • 1/3 Cup Italian Breadcrumbs
  • 1/3 Cup Parmesan cheese, grated, + extra topping
  • 1/3 Cup Shredded Mozzarella Cheese, + extra topping
  • ¼ Tsp. Black pepper
  • 6 Tbsp. Olive Oil, divided
  • 1 Baguette, sliced rounds

What You Need

Directions

  1. Pre-heat oven to 425 degrees.
  2. In a large skillet, add butter, once melted, add shallots, sauté until translucent, add garlic, sauté until fragrant. Add Mushrooms, red pepper flakes and pepper. Sauté until mushrooms are tender.
  3. Add Spinach, sauté until wilted and water is absorbed, adding breadcrumbs, mix until fully combined.
  4. In a bowl, add spinach mixture, and let cool. Then add Mozzarella cheese and parmesan cheese and mix until fully combined. Slice baguette into rounds.
  5. Coat bottom of 2 baking sheets with 3 Tbsp. each of Olive Oil.
  6. Spread cooled Spinach mixture on each baguette slice, forming a mound of spinach topping, top with shredded mozzarella and parmesan cheese.
  7. Bake for 10 minutes, until bread is golden brown and ready to serve, nice and crispy.
