In a pot, on medium heat, add oil, once heated add ground meat, cook until meat is browned.
Add onion, garlic, carrots, celery, stirring often for 5 minutes. Add cubed sweet potato, bell pepper, cubanelle pepper, Italian seasoning, diced tomatoes and broth. Mix until fully combined.
Bring to a boil, then reduce to low heat, cover and cook for 20 minutes, until vegetables have softened. Add salt and pepper to taste.
Remove from heat, and place in bowls, top with fresh cilantro, parmesan cheese and ready to serve.
