Ingredients
- 1 Package Harvest Fresh Riced Cauliflower- steamed
- 1 Package Harvest Fresh Cubed Beets
- 3 Garlic Cloves, peeled
- 1 Lemon, juiced
- 1/3 Cup Olive Oil
- ¼ Cup Tahini
- 2 Tbsp. Balsamic Vinegar
- 2 Tbsp. Honey
- 2 Tbsp Water
- ½ Tsp. Cumin
- ¼ Tsp. Salt
- ¼ Tsp. Pepper
- Pine nuts, topping
- Lemon, Zest, topping
Directions
- Pre-heat oven 375 degrees F.
- In a bowl, whisk Balsamic Vinegar, Honey, until combined. Pour honey mixture on beets.
- In oven tray, add cubed beets, and spread evenly on the pan. Place, in oven, for 35 minutes, until vegetables have softened
- In a food processor or blender, add steamed cauliflower rice, roasted cubed beets, lemon juice, olive oil, garlic, and tahini, add water and blend.
- Then add your cumin, salt and pepper, and blend well.
- Place beet cauliflower hummus in a bowl, top with pine nuts, parsley, and lemon zest and ready to serve with crackers and vegetables.
