  1. Pre-heat oven 375 degrees F.
  2. In a bowl, whisk Balsamic Vinegar, Honey, until combined. Pour honey mixture on beets.
  3. In oven tray, add cubed beets, and spread evenly on the pan. Place, in oven, for 35 minutes, until vegetables have softened
  4. In a food processor or blender, add steamed cauliflower rice, roasted cubed beets, lemon juice, olive oil, garlic, and tahini, add water and blend.
  5. Then add your cumin, salt and pepper, and blend well.
  6. Place beet cauliflower hummus in a bowl, top with pine nuts, parsley, and lemon zest and ready to serve with crackers and vegetables.
