Ingredients
- 1 Package Harvest Fresh Cubed Beets
- 2 Tbsp. Balsamic Vinegar
- 2 Tbsp. Honey
Lemon Cream
- 1 Cream Cheese, block, room temperature
- ½ Cup Plain Greek Yogurt
- ¼ Cup Heavy Cream
- ½ Lemon, juiced
- ½ Lemon, zest
- 1 ½ Tbsp. Honey
Directions
- Preheat oven at 375 degrees.
- In a bowl, whisk Balsamic Vinegar, Honey, and mix well. Pour on beets, mix until fully combined.
- On oven tray, add cubed beets, and spread evenly on the pan. Place, in oven, for 35 minutes, until beets have softened
- In a food processor, add Cream Cheese, Greek yogurt, heavy cream, lemon juice, lemon zest and honey, mix until smooth and creamy. Place in fridge and chill for one hour.
- On a dish add Lemon Cream and Beets and serve with crackers.
