Ingredients

Lemon Cream

  • 1 Cream Cheese, block, room temperature
  • ½ Cup Plain Greek Yogurt
  • ¼ Cup Heavy Cream
  • ½ Lemon, juiced
  • ½ Lemon, zest
  • 1 ½ Tbsp. Honey

Directions

  1. Preheat oven at 375 degrees.
  2. In a bowl, whisk Balsamic Vinegar, Honey, and mix well. Pour on beets, mix until fully combined.
  3. On oven tray, add cubed beets, and spread evenly on the pan. Place, in oven, for 35 minutes, until beets have softened
  4. In a food processor, add Cream Cheese, Greek yogurt, heavy cream, lemon juice, lemon zest and honey, mix until smooth and creamy. Place in fridge and chill for one hour.
  5. On a dish add Lemon Cream and Beets and serve with crackers.
