Pre-heat oven at 400 degrees. Spray a large baking dish with non-stick cooking spray. Set aside
Cook pasta, as per package directions.
Slice Chicken breasts horizontally in halves. Lightly coat with olive oil, add salt pepper and place on a baking sheet. Then bake for 20 minutes, until cooked. Then set aside for 10 minutes, until cool. Chop chicken into small pieces.
In a large bowl, add cooked pasta, cauliflower rice, broccoli, chicken, eggs, mozzarella cheese, salt, onion powder, garlic powder and butter. Mix well, until combined.
Place in a large baking dish and top with Italian blend shredded cheese.
Bake for 35 minutes, until golden brown and cheese has melted. Let cool and ready to serve.
