Ingredients

  • 4 Small Pumpkins, seeds removed
  • 1 Tsp. Garlic Powder
  • 4 Tbsp. Butter, divided
  • 1 Tsp. Salt
  • ½ Tsp. black pepper

Filling

  • 2 Packages Harvest Fresh Cubed Butternut Squash
  • 2 Honey crisp apples, peeled, cored, and cubed
  • 4 Tbsp. maple syrup or honey, divided
  • 1 Large Onion, sliced
  • 1 Cup Gruyere Cheese, grated
  • ½ Tsp, Sage, dried, ground
  • 1 ½ Tsp. Italian Seasoning
  • 1 lb. Sweet/Hot Italian sausage, casings removed and crumbled
  • 2 small fennel bulbs, thinly sliced
  • 3 Tbsp. oil, divided
  • Salt and pepper to taste

What You Need

Directions

  1. Stuffed Pumpkins: Pre-heat oven to 375 degrees. Light Spray baking sheet with cooking spray.
  2. Cut Pumpkin ¾ from the top, removing the lids.
  3. Remove inside seeds and filling forming a bowl shape. Place on baking sheet, cut side up, add butter, garlic powder, salt, and pepper, inside pumpkin and spread evenly until pumpkins are flavoured and seasoned.
  4. Place in oven for 30 minutes, until Pumpkins are soft and cooked. Remove from heat and set aside.
  5. Filling: In a large bowl, add cubed butternut squash, apples, 2 Tbsp oil, 2 Tbsp. Maple syrup, sage, Italian seasoning, salt, and pepper, mix until combined.
  6. On a baking sheet, add butternut squash mixture, spread evenly, place in oven at 400 degrees for 35 minutes, roast until tender.
  7. In a Skillet, on medium to high heat, once hot add 1 Tbsp oil, sausage meat, cook until meat is browned. Remove from heat, place in a bowl.
  8. In the same Skillet, on medium to high heat, add fennel and onion, sauté for 12 minutes until caramelized. Remove from heat, add to sausage meat.
  9. In a large bowl, add cooked Sausage, Fennel mixture, add 2 Tbsp maple syrup, and salt and pepper to taste, top with roasted butternut squash.
  10. For Assembly: Add Butternut Squash Sausage Mixture in pumpkins, filling entire pumpkin. Top with Gruyere cheese, place in oven on broil, until cheese is melted and golden brown. Remove from heat, and ready to serve.
