Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Package Harvest Fresh Butternut Squash Spirals
- 1 ½ Tsp Garlic, finely chopped
- ½ Red Onion, finely chopped
- 1 Tbsp. Lemon juice
- ¾ Cup Milk
- 2 Tbsp. Oil, divided
- 1 Tsp. Salt
- ¼ Tsp. Black pepper
- ½ Cup Water
- ¼ Cup Parmesan Cheese + 1 Tbsp. for topping
- 6 Slices Bacon, cooked pieces, Topping
Directions
- In a large bowl, add Riced Cauliflower and microwave for 5 minutes, remove and let cool.
- In a Skillet on medium heat, add 1 Tbsp oil, red onions cook, until translucent, add garlic and cook for 2 minutes. Set aside
- In a blender, add steamed cauliflower rice, milk, lemon juice, sautéed onions and garlic, salt, and pepper. Blend until smooth. Set aside
- In a skillet on medium heat add 1 Tbsp. oil, Butternut Squash Spirals, cook for 5 minutes, add water and stem for 3 minutes. Remove from heat.
- Heat cauliflower sauce in a small pot, stir in parmesan, mix until combined.
- In a bowl, add butternut squash spirals, cauliflower Sauce mix until combined.
- In a plate add butternut squash cauliflower Alfredo, top with bacon and ready to Serve.
