Place on a pan with parchment paper, add Butternut Squash sheets, brush oil on one side of each sheet, and place in the oven at 350. degrees for 10 minutes, or until soft (to be able to roll). Let cool.
In a frying pan, cook prosciutto, until slightly crisp. Set aside.
Once cooked, lay Butternut Squash sheets on a large pan, spread cream cheese on each sheet, then add one slice of prosciutto on each.
Roll them up and place in the oven at 350 degrees for 10 minutes, until soft.
