Once caramelized remove from heat and let cool at room temperature.
In a large bowl, add cream cheese, mayonnaise, Greek yogurt, using a hand blender, beat until smooth. Add caramelized shallots, salt and pepper, mix until fully combined.
Place in a bowl and ready to serve with your favourite vegetables.
