Ingredients
- 1 Package Harvest Fresh Cubed Sweet Potato
- 4 Harvest Fresh Shallots, cut in rounds
- 1 Sheet Puff Pastry, thawed
- ½ Cup Feta Cheese Crumbled
- 1 Tbsp. Butter
- 2 Tbsp. Oil, divided
- 1 Egg, egg wash
- 1 Tsp. Fresh Sage
- 1 Tsp. Salt
- ¼ Tsp. Pepper
- Hot Honey, drizzle
- Crumbled bacon, cooked, topping
Directions
- Pre-heat to 400 degrees, line a baking pan with parchment paper.
- In a bowl, add cubed sweet potato, 1 Tbsp. Oil, salt and pepper, mix until all combined. Place on baking sheet and bake for 15 minutes, until slightly tender. Remove from heat and set aside.
- In a skillet, add 1 Tbsp. Butter, add oil, add shallots, sauté on low for 25 minutes, stirring occasionally, until golden and caramelized.
- Prepare the Pastry: Unroll Puff Pastry onto a parchment lined baking pan, top with caramelized onions, leaving a border to fold puff pastry, spread evenly, top with roasted sweet potato, feta cheese, and sage.
- Once assembled, fold the pastry edges up and brush puff pastry with egg wash. Bake for 25 minutes, until golden brown. Remove from heat, top with bacon, drizzle with hot honey and ready to serve.
