Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Cup Mozzarella, shredded, divided
- ¼ Cup Parmesan Cheese
- 1 Large Egg, beaten
- 1 Garlic Clove minced
- ¼ Tsp. Onion powder
- 2 Tbsp. parsley, finely chopped, more for topping
- Salt and Pepper to Taste
- Marinara Sauce, dipping
Directions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
- Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
- In a bowl, add steamed cauliflower rice, egg, ½ Cup shredded cheese, parmesan cheese, and parsley. Mix all together, then add garlic and onion powder. Salt and pepper to taste. Mix until fully combined.
- Place Cauliflower mixture onto baking sheet. Spread into rectangular shape. Bake for 10 minutes, remove from heat, add remaining shredded cheese, place in oven for additional 5 minutes, until cheese is melted and golden brown.
- Remove from oven, garnish with freshly chopped parsley and ready to serve.
