Ingredients

  • 1 Package Harvest Fresh Riced Cauliflower
  • 1 Cup Mozzarella, shredded, divided
  • ¼ Cup Parmesan Cheese
  • 1 Large Egg, beaten
  • 1 Garlic Clove minced
  • ¼ Tsp. Onion powder
  • 2 Tbsp. parsley, finely chopped, more for topping
  • Salt and Pepper to Taste
  • Marinara Sauce, dipping

Directions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
  3. Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
  4. In a bowl, add steamed cauliflower rice, egg, ½ Cup shredded cheese, parmesan cheese, and parsley. Mix all together, then add garlic and onion powder. Salt and pepper to taste. Mix until fully combined.
  5. Place Cauliflower mixture onto baking sheet. Spread into rectangular shape. Bake for 10 minutes, remove from heat, add remaining shredded cheese, place in oven for additional 5 minutes, until cheese is melted and golden brown.
  6. Remove from oven, garnish with freshly chopped parsley and ready to serve.

