Preheat oven to 400°F and line a baking sheet with parchment paper.
In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
Using a clean dishtowel, drain riced cauliflower, and squeeze out as much water as possible.
In a bowl, add steamed riced cauliflower, eggs, shredded cheese, parmesan cheese, almond flour, coconut flour and seasoning, salt and pepper. Mix until fully combined.
Using a small ice cream scooper, place Cauliflower mixture onto baking sheet. Spread into round shapes and top with Everything Bagel seasoning. Bake for 30 minutes, remove from heat, until cooked and golden brown.
Remove from oven, and ready to serve with tomato sauce.
