Ingredients
- 1 Package Harvest Fresh Riced Cauliflower
- 1 Cup Mozzarella Cheese, shredded
- 1 Large Egg, whisked
- 1 Tsp. Garlic powder
- ½ Tsp. Italian Season
- 1 Tbsp Butter
- ½ Tsp. Salt
- ¼ Tsp. Pepper
Filling
- 1 Cup Harvest Fresh Chopped Kale
- ¼ Cup Red Pepper, finely chopped
- ½ Cup Mozzarella, Cheddar Cheese, shredded
- 1 Garlic Clove, minced
- 1 Tbsp. Butter, divided
Directions
- Pre-heat oven 375 degrees F.
- In a saucepan, add an inch of water, cauliflower rice, with the lid, steam for 6-8 minutes, until softened; remove from heat and let cool.
- Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
- In a bowl, add steamed cauliflower rice, egg, shredded cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Divide cauliflower mixture into 4 portions and form into squares, lightly brush with cooking oil.
- Bake for 15 minutes, flip and bake for 5 minutes more, until cooked. Remove from heat and set aside.
- For Filling: In a large bowl, massage chopped kale olive oil and salt.In a skillet, on medium heat, add ½ Tbsp. butter, once melted, add garlic sauté until fragrant, add pepper, Chopped Kale, sauté until wilted and cooked.
- For Assembly: In a skillet, heat add ½ Tbsp. butter, once melted, place one cauliflower slice, add cheese and sautéed Kale on top, more cheese, then add other cauliflower slice, flip until cheese is melted. Repeat for each. Remove from heat and ready to serve.
