Char corn on Cobb and remove from the Cobb and transfer to a bowl.
In a skillet on high heat, add olive oil, Jalapeno, sauté until slightly charred. Add Cauliflower rice, charred corn, salt and pepper, sauté for 5 minutes, until cauliflower rice is tender. Remove from heat and let cool.
In a bowl, mix dressing ingredients, mix well until all combined.
In a large bowl add cauliflower corn mixture, yellow and red peppers, red onion, avocado, green onions, cilantro, feta cheese and dressing, mix well until all combined. Garnish with cilantro, and ready to serve.
