In a large pot, heat water with salt boiling on high. Carefully place cabbage head in the water. Cook for 10 minutes.
Transfer cabbage in a colander. Once cool peel off the leaves.Cut the thick ribs (not too much), to fold easily.
For the filling, heat olive oil in a skillet on medium high heat. Add onion and garlic, cook 4 minutes, until soft.
Add ground turkey, cook until browned, add wine, salt and pepper to taste.
In a pot of water, add cauliflower rice, boil for 2 minutes. Place cauliflower rice in a colander.
Combine cooked ground turkey and cauliflower rice, add mozzarella and parmesan cheese and mix together.
Place filling in the centre of each cabbage leaf, then roll up and repeat.
Place tomato sauce at the bottom of the oven dish Add cabbage rolls and top with tomato sauce. Cover securely, bake until cooked in the centre at 375 degrees. Garnish with basil, or parsley finely chopped.
