2 Raw Harvest Jalapenos, seeded + sliced rounds for topping
½ Red and Yellow pepper- roughly sliced
1 Bag Tortilla Chips
1 Lb. Ground Beef
227g Cremini Mushrooms, quartered
3 cups Mixed Tex Mex Cheese, shredded
2 Garlic Cloves, minced
¼ Cup Cilantro, finely Chopped
1 Pkg. Taco Seasoning mix
2 Tbsp. Oil, divided
½-1 Cup Water

Directions
Pre-heat Oven at 400 degrees, Line a baking sheets with parchment paper.
In a large bowl, add cubed Sweet Potatoes, 1 Tbsp. oil, salt and pepper. Mix until fully combined. Place on baking sheet and spread evenly, bake for 30 minutes, until brown and cooked.
Add Tortilla Chips on baking sheet and spread, sprinkle with half of shredded cheese, beef mixture, roasted cubed sweet potatoes, top with remaining shredded cheese. Bake in oven until cheese is melted and ready to serve.
