Ingredients

  • 1 Bag Harvest Fresh Spinach, finely chopped, sautéed
  • 2pcs Chicken Breast- sliced, pounded
  • 1 ¼ Cup- Mushrooms, sliced
  • ½ Red Pepper, diced
  • 3 Garlic Cloves, minced
  • ½ Onion, diced
  • 1 Cup Shredded Mozzarella Cheese
  • 1/3 Cup Mayonnaise, or Roasted Pepper Hummus
  • 1 Tbsp. Olive Oil
  • 1 Tsp. Salt
  • ¼ Tsp. Pepper

Directions

  1. Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside
  2. In a plate, place chicken breast slices, season with salt and pepper.
  3. In a skillet, over medium- high heat, add 1 Tbsp oil, onion sauté until translucent, garlic sauté until fragrant, add mushrooms, sauté until soft and cooked, add peppers, add Spinach, sauté until wilted, add salt and pepper. Remove from heat.
  4. In a ramekin bowl place chicken breast, forming shape of the bowl, fill chicken with spinach mushroom mixture. Form and seal in a ball shape. Brush Stuffed Chicken Ball with mayonnaise or hummus and top each with shredded cheese.
  5. Place in oven for 35 minutes, until chicken is cooked and golden brown. Remove from heat and ready to serve.

