Ingredients

Creamy lemon sauce

  • 1 Cup Heavy Cream
  • 1 Cup White Cheddar Cheese, grated
  • ¼ Cup Parmesan cheese, grated
  • 1 Lemon, juice
  • ½ Lemon, zest
  • 1 Tsp. Salt

What You Need

Directions

  1. In a Skillet on high heat, add butter, add onions, sauté until translucent, add garlic, and thyme, sauté until fragrant.
  2. Add cauliflower rice, salt, pepper, and broth, continue stirring for 8 minutes, until moisture is reduced.
  3. Remove 1 Cup of Cauliflower mixture and set aside.
  4. Add Spinach, cook until wilted and remove from heat.
  5. In a pot, on medium to high heat, add 1 cup Cauliflower mixture, heavy cream, white cheddar, parmesan cheese, lemon juice, lemon zest and salt. Cook until cheese has melted.
  6. In a large bowl, add Cauliflower spinach rice mixture, cooked steak, and top with creamy lemon sauce and ready to serve.
