Ingredients

  • ½ Bag Harvest Fresh Spinach
  • 1 Cup, Orzo Pasta
  • 6 Cups Chicken Broth
  • 1 Jar Cannellini Beans
  • 1 ½ Cups Cooked Lentils
  • ½ Cup Basil Pesto
  • ½ Cup milk
  • 1 Cup Parmesan Cheese, grated and rind
  • 4 Garlic Cloves, smashed, minced
  • ½ Onion, diced
  • 1 Tbsp. Olive Oil
  • 2 Tbsp. Butter, unsalted
  • 1 Lemon, ½ -1 Zest and Juice
  • Salt and Pepper to taste

Directions

  1. In a large pot heat over medium to high heat, add oil, garlic, onion, sauté until fragrant. Add butter, once melted, add orzo, mix until slightly golden approx. 2 minutes. Add chicken broth, bring to a boil.
  2. Add Spinach, beans and lentils, add parmesan rind, simmer for 10 minutes, until pasta has softened. Stir constantly.
  3. Add milk, pesto, parmesan cheese, lemon juice, lemon zest, simmer for 3 minutes, until fully warmed. Top with parmesan cheese, basil and ready to serve.
