Ingredients
- ½ Bag Harvest Fresh Spinach
- 1 Cup, Orzo Pasta
- 6 Cups Chicken Broth
- 1 Jar Cannellini Beans
- 1 ½ Cups Cooked Lentils
- ½ Cup Basil Pesto
- ½ Cup milk
- 1 Cup Parmesan Cheese, grated and rind
- 4 Garlic Cloves, smashed, minced
- ½ Onion, diced
- 1 Tbsp. Olive Oil
- 2 Tbsp. Butter, unsalted
- 1 Lemon, ½ -1 Zest and Juice
- Salt and Pepper to taste
Directions
- In a large pot heat over medium to high heat, add oil, garlic, onion, sauté until fragrant. Add butter, once melted, add orzo, mix until slightly golden approx. 2 minutes. Add chicken broth, bring to a boil.
- Add Spinach, beans and lentils, add parmesan rind, simmer for 10 minutes, until pasta has softened. Stir constantly.
- Add milk, pesto, parmesan cheese, lemon juice, lemon zest, simmer for 3 minutes, until fully warmed. Top with parmesan cheese, basil and ready to serve.
