Pre-heat oven at 425 degrees, line a baking sheet with parchment paper.
Cut Nantes Carrots, lengthwise into preferred size.
In a large bowl, add Nantes carrots, oil, honey, garlic, dill, salt and pepper. Toss until fully combined. Reserve leftover liquid from bowl. Set aside
Place Nantes Carrots on baking sheet, and bake for 25 minutes, until carrots are tender. Remove from and top with reserved liquid, place back in oven for 5 minutes.
Remove from heat, plate and top with feta cheese, dill, and drizzle honey and ready to serve.
