Ingredients
- 1 Package Harvest Fresh Riced CauliflowerÂ
- 1 Lb. Chicken Breasts
- 1 Container Hummus, roasted pepper
- 1 Red Bell Pepper, sliced
- 1 Onion, finely chopped
- ½ Cup Green Onions, sliced
- ½ Cup Feta Cheese, crumbled
- ½ Cup Kalamata Olives, pitted and sliced
- 1 Tbsp. Olive Oil
- 1 Tsp. Greek Seasoning
- ½ Tsp. Paprika
- Salt and Pepper to taste
Directions
- Pre-heat oven 375 degrees F. Line a sheet with parchment paper.
- Pat dry chicken, season with salt and pepper, then spread roasted pepper hummus evenly on top. Season with paprika, and place on baking sheet.
- Bake chicken for 30 minutes, until chicken is cooked.
- In a Skillet on high heat, add olive oil, add onions and red pepper, sauté for 2 minutes, add cauliflower rice, and Greek seasoning, sauté for 5 minutes, remove from heat.
- In a bowl, add Cauliflower rice mixture, green onions, feta cheese and kalamata olives and top with chicken slices and ready to serve.
