Pre-heat oven 375 degrees F. Line a sheet with parchment paper.
Pat dry chicken, season with salt and pepper, then spread roasted pepper hummus evenly on top. Season with paprika, and place on baking sheet.
Bake chicken for 30 minutes, until chicken is cooked.
In a Skillet on high heat, add olive oil, add onions and red pepper, sauté for 2 minutes, add cauliflower rice, and Greek seasoning, sauté for 5 minutes, remove from heat.
In a bowl, add Cauliflower rice mixture, green onions, feta cheese and kalamata olives and top with chicken slices and ready to serve.
