Ingredients

  1. 2 packages of Harvest Fresh Zucchini Spirals
  2. 4 Gourmet Garlic cloves, minced divided
  3. Harvest Fresh Shallot, minced
  4. 1 lb Shrimp, peeled & deveined
  5. 4 tbsp unsalted butter, divided
  6. 2 tbsp fresh parsley, chopped
  7. 2 tsp of Lemon zest
  8. Salt and black pepper

What You Need

Directions

  1. Melt 1 tablespoon of butter in a large skillet on medium-high.
  2. Add garlic cloves (minced) and cook, stirring frequently for a minute.
  3. Place the zucchini spirals in a skillet and saute until the texture is just past al dente.
  4. Season with salt & pepper, to taste.
  5. Place the cooked zucchini spirals to the side & keep warm.
  6. Melt 3 tablespoons of butter in skillet. Add the 2 remaining garlic cloves (minced) & shallot. Stir frequently, approximately 2 minutes.
  7. Add shrimp and salt & pepper to taste.
  8. Saute until the shrimps are cooked thoroughly (a nice orange colour), approximately 4 minutes.
  9. Now add in the lemon zest and parsley.
  10. Simply prepare & serve with zucchini spirals.
