3 Cups Cannellini Beans, cooked, drained, and rinsed
2 Sweet, 2 Hot Sausages, out of casing and cooked
1 Can Diced Tomatoes, Fire Roasted
2 Tbsp. Olive Oil
6 Cups Vegetable Broth
½ Large Onion, finely chopped
3 Garlic Cloves, finely chopped
2 Tbsp. Fresh Cilantro, chopped
2 Tbsp. Fresh Thyme, finely chopped
Salt and pepper to taste

Directions
In a pot, on medium heat, add oil, sausage, cook until browned.
In the same pot, add onions, sauté until translucent and cooked, add garlic sauté until fragrant, add fire roasted tomatoes, cilantro, and thyme. Mix well.
Add vegetable broth, cubed sweet potatoes, carrot spirals simmer for 15-20 minutes, until vegetables have softened, add cannellini beans, Zucchini Spirals, salt and pepper to taste, simmer for 10 minutes, until cooked and zucchini has softened.
Remove from heat, and place in bowls, top with grated parmesan cheese, and, and ready to serve.
