Ingredients
- 1 Cup Raw Harvest Jalapeno, cored and minced
- 1 Pork Tenderloin
- 1 Package Herb and Garlic Boursin Cheese
- ½ Cup Cheddar Cheese, shredded
- 1 Package Sliced Bacon
- 1 Tsp. Chili Powder
Side Vegetables, Topping of preference:
- 1 Package Harvest Fresh Cubed Sweet Potatoes
- 1 Cup Harvest Fresh White Pearl Onions
- 1 Package Harvest Fresh Nantes Carrots
- 2 Tbsp. Olive Oil
- Salt and Pepper
Directions
- Pre-heat oven at 400 degrees
- Lay tenderloin flat on a cutting board, slice in half lengthwise, not cutting all the way through.
- In bowl, add Jalapeno, Boursin herb and garlic cheese, cheddar cheese and chili powder.
- Spread Jalapeno cream cheese mixture evenly on the pork loin.
- Wrap bacon around tenderloin, until covered on all sides.
- In a large bowl add vegetables, olive oil, salt, and pepper and mix well.
- In a large baking pan, add stuffed tenderloin and vegetables. Place in oven for 45-60 min, until cooked. Remove from oven, let cool for 10 min prior to serving.
- On a large dish add pork tenderloin, top with gravy, and serve with roasted vegetables.
