Ingredients
- 3 Cups Harvest Fresh Chopped Kale
- 1 ½ Cup Spelt flour
- 1 Cup All Purpose Flour
- 1 ½ Tbsp. Baking powder
- 1 Cup Feta Cheese, crumbled
- ¼ Cup Chopped pecans, + 1 Tbsp for topping
- 2 Eggs, Beaten
- ½ Cup Extra Virgin Olive Oil
- ¾ Cup Greek Yogurt, plain 2%
- ¾ Cup Milk
- ½ Tsp. Salt
Directions
- Pre-heat oven at 350 degrees. In a loaf pan, line with parchment paper.
- In a large bowl, add spelt flour and all-purpose, baking powder, chopped kale and feta.
- In a bowl, add eggs, olive oil, yogurt and milk. Mix until fully combined.
- Pour wet ingredients into the dry ingredients, add pecans and mix until fully combined.
- Transfer batter into the loaf pan, top with chopped pecans.
- Bake for 45-50 minutes, until inserting a toothpick comes out clean and edges start to brown.
- Let cool for 10 minutes and place on a cooling rack and ready to slice and serve with butter.
