Ingredients

  • 3 Cups Harvest Fresh Chopped Kale
  • 1 ½ Cup Spelt flour
  • 1 Cup All Purpose Flour
  • 1 ½ Tbsp. Baking powder
  • 1 Cup Feta Cheese, crumbled
  • ¼ Cup Chopped pecans, + 1 Tbsp for topping
  • 2 Eggs, Beaten
  • ½ Cup Extra Virgin Olive Oil
  • ¾ Cup Greek Yogurt, plain 2%
  • ¾ Cup Milk
  • ½ Tsp. Salt

Directions

  1. Pre-heat oven at 350 degrees. In a loaf pan, line with parchment paper.
  2. In a large bowl, add spelt flour and all-purpose, baking powder, chopped kale and feta.
  3. In a bowl, add eggs, olive oil, yogurt and milk. Mix until fully combined.
  4. Pour wet ingredients into the dry ingredients, add pecans and mix until fully combined.
  5. Transfer batter into the loaf pan, top with chopped pecans.
  6. Bake for 45-50 minutes, until inserting a toothpick comes out clean and edges start to brown.
  7. Let cool for 10 minutes and place on a cooling rack and ready to slice and serve with butter.
