In a large bowl, massage chopped kale with olive oil.
In a frying pan, on medium heat, add 2 Tbsp. butter, once melted add onions, red pepper, sauté for 3 minutes, and add Chopped Kale, sauté until cooked. Set aside.
Using a Pizza Pan, laying 3 phyllo sheets, brush butter evenly on top. Add Kale mixture, and egg, mix until combined.
Add mozzarella cheese, feta cheese and parmesan cheese on top, then layer with 3 additional sheets with butter and repeat until Phyllo is done.
Bake for 400 degrees for 20 minutes, until cooked and golden brown.
