Ingredients
- 1 Package Harvest Fresh Kale Slaw
- 1 Cup Dry Quinoa, cooked
- 1 Ripe Mango, peeled, chopped
- 1 Avocado, peeled, sliced
- ½ Cup Green onions, sliced
- 1 Can Black beans, drained and rinsed
- ½ Red Bell Pepper, diced
- ¼ Cup of Cilantro, chopped
- Salt to taste
Dressing:
- 3 Tbsp. Olive oil
- 3 Tsp. Lime juice
- 3 Tbsp. honey
- ¼ Tsp. Cayenne pepper
- ¼ Tsp. Ginger
Directions
- In a bowl, place Kale slaw, cooked quinoa, black beans, mango, avocado, green onions, red pepper, cilantro, mix until all combined.
- Prepare dressing, combining all ingredients in a small bowl, mix well.
- Pour dressing on top, mix well. Season with salt and ready to serve.
