In a large bowl, add cubed sweet potatoes, salt, black pepper, and 2 Tbsp. Olive oil, mix well.
In oven tray, add cubed sweet potatoes and spread evenly on the pan.
Place in oven, bake for 30 minutes, until cooked, set aside.
In a large skillet, add oil over medium to high heat. Add onions, cook until translucent, add garlic, cook for a minute, then add cubed sweet potatoes and Kale Super blend, cook for a few minutes, until wilted.
Remove from heat, add salt and pepper.
Place on a dish, add avocado and eggs and ready to serve.
