Ingredients
- 1/3 package Harvest Fresh Zucchini Spirals
- 1/3 package Harvest Fresh Carrot Spirals
- 1/3 Package Harvest Fresh Beet Spirals
- ½ yellow or red pepper, sliced
Directions
- Mix the balsamic vinegar, olive oil, mustard, salt and pepper to make a dressing or use your favourite vinaigrette. *You should use a vinaigrette, so the vinegar can tenderize the spirals. Mix the spirals with the dressing and let sit in the fridge for 10-15 minutes.
- Plate the salad and top with sweet peppers and feta cheese.
- Note* You can also add some toasted pecans, sunflower seeds or croutons or add your own twist!
