Ingredients

  • 1 Package of Harvest Fresh Riced Broccoli
  • 1 Egg, whisked
  • ¼ Cup Almond Flour
  • ½ Cup Mozzarella Cheese
  • ¼ Cup Parmesan Cheese
  • ¼ Cup Green Onions
  • 1 Tbsp. Garlic powder
  • 1 Tsp. Italian seasoning
  • Salt and Pepper to taste

What You Need

Preparation

  1. In a saucepan, add an inch of water, broccoli rice, with the lid, steam for 4 minutes, until softened; remove from heat and let cool.
  2. Using a clean dishtowel, drain cauliflower rice, and squeeze out as much water as possible.
  3. In a bowl, add steamed broccoli rice, egg, almond flour, mozzarella cheese, parmesan cheese, seasoning, salt and pepper to taste. Mix well.
  4. Lightly spray the pan with a non-stick spray, using an ice cream scooper, scoop broccoli mixture onto the prepared baking sheet. Using a spatula flatten the mixture into round flat patties.
  5. Once flattened, place them on parchment paper and spray with cooking spray, place in air fryer at 400 degrees for 8-10 minutes, or until golden brown.
